My family raves about my lemon bars and even though the recipe is in our family cookbook, they claim I am the only one who can make them. I have been told multiple times that I needed to write my version of the recipe, so here is the original recipe and my interpretation.
1 cup butter
1/2 cup powdered sugar
2 cups flour
1/2 tsp salt
2 cups sugar
1/2 tsp baking powder
1/4 cup flour
1/4 cup lemon juice
1. Cream butter and sugar. Add 2 cups flour and salt and mix well. Pat into greased 9×13. Bake at 350 degrees for 15-20 minutes.
2. Mix all remaining ingredients for filling. Pour over hot crust. Bake for an additional 20-25 minutes. When done, sprinkle with powdered sugar.
Ok, now for the Kiy secrets!
Your butter has to be soft. Not melted, just soft. Mix it with a squirt of vanilla (literally, just grab the bottle and squirt some into the bowl) for a LONG time. While it is going you can gather the rest of the ingredients, get a drink, change a diaper, wash your hands, and check your email. Your butter should look nice and smooth. During this mixing I stop several times and scrap the beater off. You really want this butter smooth. Then I add the sugar, mix for a few seconds. The salt, just shake two shakes from the shaker in while it is going. Add the flour and mix until it starts forming balls. Then spread it out on your pan. It will look weird. Smash it with your fingers and it should look like a giant sugar cookie.
As soon as you have the crust in the oven you need to make the filling. I try to make it as quickly as possible and then let it sit while the crust is baking. Does it help? I have no idea, that’s just how I do it. When the crust is ready, you want to make sure you mix the filling one last time before pouring it in. While it sits it develops a white foamy layer on top and it needs to be reincorporated. Bake as directed.
So dear family, yes, I do add a little vanilla, but besides that I actually follow the recipe! Kiy style of course, but now you can do it too! Good luck!
